Chocolate Buttercream Cookie Sandwiches

Looking for a classic, cozy sweet treat to whip up for your fam? Well I have the perfect one right here! 

Cookie Shopping List:
-1 Cup (2 Sticks) Salted Butter, softened
-1/2 Cup Sugar
-2 Eggs
-1 1/2 Cup Brown Sugar
-2 Tsp Vanilla
-2 3/4 Cups All Purpose Flour
-1/2 Tsp Salt
-1 Tsp Baking Soda
-1 1/2 Tsp Baking Powder
-2 1/4 cups Semi Sweet Chocolate Chips

1. Preheat oven to 360 degrees. Cream your butter, sugar, and brown sugar until fluffy. (Approximately 3 minutes on medium speed on your mixer)

2. Add both eggs and vanilla and beat for 2 minutes. Add baking soda, baking powder, salt and flour until fully mixed

3. Add chocolate chips, your batter should be thick

4. Drop about 2 tablespoons of dough onto baking sheet lined with parchment paper

5. Bake 12-14 minutes until edges are golden brown

Chocolate Buttercream Shopping List:
-6 Tablespoons Salted Butter, Softened
-2 2/3 Cups Powdered Sugar
-1/2 Cup Cocoa
-1/3 Cup Milk
-1 1/2 Teaspoons Vanilla

1. Place butter in bowl and beat until creamy

2. Add sugar and cocoa, mixing well

3. Stir milk in portions, stirring each time. Add vanilla
*Add milk slowly as it gets runny quickly* 

To Build the Sandwiches:

Once your cookies have cooled, spread a thin layer of buttercream on one cookie and top with another. This recipe can also be used just for the cookies if you don't want to make the buttercream sandwich!
